The aim in the vineyards is to produce grapes which generate a wide spectrum of flavours, and to express that all-important “texture” one finds in high end Pinot Noirs. There are 12 different vineyard blocks of Pinot Noir. Each vineyard with its different soil type is planted to pre-determined site specific Dijon clones. Over 5 years have been spent researching the expressions of these different Dijon clones from our blocks, producing a character profile of each block over the vintages. It is this vital vineyard information that helps us decide which blocks to choose in making up the final Pinot Noir blend. Presently only 5 of the 12 Pinot Noir vineyards are used for our final blend.
