MERLOT

“Good even ripeness” is the key when it comes to Merlot. Canopy management involves techniques to ensure that there are no herbaceous or green characteristics yet still retain the minerality of the terroir and therefore freshness in the wine. 50% of the vineyard is made up of French clones, which provide structure and elegance while the other 50% of Italian clones provides richer savoury nuances.
